Here is a super simple, yummy and slightly healthy recipe! A friend gave me this recipe and I love making it for the kids, and they look at it as a yummy chocolate treat, but I know that while it’s definitely a treat, it doesn’t contain any refined sugar,and adds a good dose of protein! You can also vary the ingredients for this gluten free vegan recipe, I used crunchy peanut butter in this batch, but you can use smooth peanut butter, almond, cashew – any nut or seed butter would probably work – use sun or sunflower seed butter to make them nut free; there are tons of options. With only 4 ingredients, it comes together in less than 5 minutes!
Quick Chocolate “Fudge” Recipe:
½ cup peanut or other nut/seed butter
½ cup coconut oil
½ cup good quality cocoa powder
¼ cup maple syrup
1. In a small pot melt coconut oil and nut butter while whisking. Whisk in maple syrup and cocoa powder until combined and smooth.
2. Line a small square dish with parchment paper. Pour mixture into the dish. Let cool at room temperature then place in the fridge to harden.
3. Once set take the parchment paper and chocolate out of the dish, place on a cutting board and cut into squares.
* You can dress these “fudge” pieces up by rolling them in unsweetened shredded coconut (makes them less sticky to handle) or even sprinkles! Store in the fridge or freezer; as they contain coconut oil, they are “melty” and soften quite quickly at room temperature.
** This recipe is very easy to double or halve!
